Cheesy Mexican Taco Potato Casserole
We love Mexican food in our household – traditional style and recipes with international flavours added in, such as these Teriyaki chicken tacos.
Our love of Mexican food grew even more so after having visited Mexico in 2018. It is easily our favourite cuisine to make at home, with an Aussie twist.
My mother-in-law made a taco potato bake for a family dinner one winter night and it was an instant hit.
Deciding to recreate our own version, creating this hearty Mexican potato casserole, loaded with taco flavours and simple to make.
It now makes a regular appearance on the meal plan in our household, especially over the cooler winter months alongside our slow cooker favourite beef goulash.
It’s also perfect if you’re doing weekly theme night family dinners and want a change from the typical Taco Tuesday or Mexican Monday!
It is also a great way to use up leftover taco meat in case you ever make too much… which isn’t hard to do!
While potato bake isn’t the healthiest dinner choice, it’s certainly filling and most bake recipes freeze really well if you do a lot of freezer cooking and bulk meals.
Mexican Potato Casserole Ingredients
- 500 grams lean beef mince
- 1 medium onion, finely diced
- 4 large potatoes, thinly sliced
- 1 cup corn kernels
- 1 packet of taco seasoning
- 2 cups of grated mozzarella cheese
- 1 jar of salsa (approximately 300g)
- Salt and pepper

- Sour cream
- Shallots
- Guacamole
- Jalapenos
How to Make Mexican Potato Bake
STEP ONE – Preheat oven to 200 degrees celsius.
STEP TWO – Thinly slice your potatoes and add to a large pot of boiling water for around 10 minutes to soften.
STEP 3 – Add a tablespoon of oil to a large heated frying pan. Cook onion until soft, before adding the mince.
STEP 4 – Once the mince is browned, stir in corn, then add taco seasoning and allow to simmer for 10 to 15 minutes (follow instructions on the packet).
STEP 5 – Layer softened potato slices along the bottom of a baking dish and season with salt and pepper. Top with a layer of mozzarella cheese
STEP 6 – Stir salsa through mince mixture then add mince on top of the potatoes. Sprinkle with a layer of mozzarella.
STEP 7 – Cover baking dish with aluminium foil and bake in the oven for around 35 minutes. Then remove foil and bake for a further 15-20 minutes, or until cheese is browned.
STEP 9 – Serve topped with shallots and with a side of with guacamole and sour cream. Or pair your taco potato bake with a side salad.
Variations
Want a spicy taco bake instead? Change up your salsa for a medium or hot version and add jalapenos to your mince mix.
We needed ours to be kid-friendly, so hubby added his jalapenos on top after it was served instead as an alternative if you have young children or family members who don’t enjoy spicy food.
You could also add chilli or a spicy taco seasoning mixture to your ground beef recipe for other variations to give your taco potato bake some extra heat. The sour cream and guacamole help balance the spice.
For some extra crunch, crush up some corn chips on top of the cheese and even mix some into your potato layer as well.

Storing Potato Casserole
This Mexican bake recipe will keep in the fridge for 2 days, in an airtight container.
If you are unlikely to finish your leftovers in that time, divide it into freezer safe containers or bags and freeze for later.
It will keep for up to 2 months in the freezer and is perfect for bulk meal prep menus!

- Add a layer of mozzarella cheese on top.
- Cover baking dish with aluminium foil and bake in the oven for around 35 minutes. Then remove foil, sprinkle with chopped shallots and bake for a further 15-20 minutes, or until cheese is browned.
- Serve with guacamole and sour cream, or with a side salad. Enjoy!
Notes
