Chocolate Chip Weet-Bix Biscuits

You know you’re onto a good thing when the baked goods are lucky to last a full day! That’s what happens when I make these Chocolate Chip Weetbix Biscuits!

This school lunch box recipe was meant to last a few days, but it never even made it into the lunchboxes the first time around. Loaded with rolled oats, coconut, honey and of course, chocolate, these Weet-Bix cookies, you might want to make a double batch!

CHOCOLATE CHIP WEET BIX BISCUITS

My kids love cereal and Weet-Bix was no exception when we first introduced them to the popular Aussie breakfast cereal. Plus of course, chocolate chips make everything better!

Sanitarium Weet-Bix is a popular Australian and New Zealand breakfast cereal. This recipe will work with any type of wheat biscuit cereal though.

This Weetbix chocolate chip cookies recipe is a quick and easy recipe to make and it works great as a not-so-bad for you treat for all ages, whether you are looking for after school snack or something yummy to pop into school or work lunches.

This Weet-Bix recipe is also a great one to make with the kids too, as it is pretty simple. Older kids may even be able to make them without your help. So long as they share!

Our first batch vanished overnight thanks to my husband discovering the last few in the container when he went looking for an after-dinner treat. Sneaky!

Ingredients

  • 4 Weetabix crushed
  • ½ cup rolled oats
  • 1 cup Self Raising flour
  • 3/4 cup brown sugar
  • 1/2 cup shredded coconut
  • 125g butter
  • 1/4 cup honey
  • ¾ cup chocolate chips

How To Make Choc Chip Weet Bix Cookies

  1. Preheat oven to 180C or 160C for fan-forced. Prepare 2 baking trays by lining with non-stick baking paper.
  2. Combine all dry ingredients in a large bowl.
  3. Melt butter, then pour butter and honey over dry ingredients and mix to combine. 
  4. Roll tablespoon amounts of mixture into balls then flatten slightly onto prepared trays. Allow room for biscuits to spread while cooking.
  5. Bake for 8-10 mins or until golden. Allow them to cool on trays.

Weetbix Biscuit Recipes Variations

Try this recipe minus the chocolate chips as Weetbix breakfast biscuits, for those mornings when everything is a bit rushed.

You can make them larger and bake a little longer if needed. This will make them easier to eat on the go, or for kids running late for school.

Add dried fruit, such as cranberries or sultanas instead of chocolate for an alternative sweet flavour burst.

This recipe tastes quite similar to ANZAC biscuits, without the large quantities of refined sugar. While they do still have some of the sweet stuff, they have plenty of good stuff too!
