Healthy Chocolate Rice Bubble Slice Recipe (No Bake)

This healthy chocolate slice is a perfect sweet treat without the guilt! It’s not too often you hear the words healthy and chocolate in one sentence… especially not when it’s a chocolate rice bubble slice recipe, but guess what! It’s here and it’s amazing!

This no-bake slice is a healthy chocolate crackle slice that you can enjoy when you’re trying to keep the sweet tooth in check!

HEALTHY CHOCOLATE RICE BUBBLE SLICE RECIPE

Back at the start of the school year, I was doing a bit of experimenting. My kids LOVE chocolate crackles, so was it possible to make healthy chocolate crackles instead?

Healthy Chocolate Rice Bubble Slice

Yeah, it is. Only we decided to convert it into a healthy chocolate crackle slice instead!

This alternative to our not so healthy favourite chocolate coconut slice, it’s one to enjoy when you can’t quit your sweet treats but still want to eat better.

Not only does it taste amazing, but it also uses healthy ingredients, so you can feel like a total BOSS when you serve it up for your kids!

Or sneak half a tray worth yourself when no one else is looking! It’s that good!

Healthy Chocolate Rice Bubble Slice

Ingredients:

  • 4 cups of Rice Bubbles or similar puffed rice cereal
  • 2 cups desiccated coconut
  • 3/4 cup honey
  • 1/2 cup melted coconut oil
  • 1/4 cup sunflower seeds, grinded
  • 1/4 cup raw cacao powder

How To Make Healthy Rice Bubble Slice

  1. Grind up your sunflower seeds in a food processor until fine.
  2. Add Rice Bubbles, sunflower seeds and raw cacao powder to a large mixing bowl.
  3. Add coconut oil and honey and mix your ingredients together well.
  4. Prepare a slice tray by lining with baking paper. I used a medium sized rectangular tray.
  5. Spoon mixture into tray and press down really firmly into the bottom of the tray. Use another dish or similar to press down or use a glass to roll. You need to put a bit of muscle into this step.
  6. Place in fridge and leave to set. This will take around 3 hours.
  7. Once set, cut slice into squares and store in an airtight container in the fridge.

Tips For Making Healthy Chocolate Slice

This healthy chocolate Rice Bubble slice needs to stay chilled or it may crumble so it isn’t a great option for school lunches, however, it is perfect for after school snacks or curbing the sweet tooth.

We keep ours in the fridge and just grab a single slice for a healthy treat as needed.

A healthy alternative to everyone's favourite chocolate crackles, in a slice. Indulge minus the guilt with this chocolate rice bubble slice.

Ingredients

Notes

Ensure slice is firmly pressed into the tray. Using another tray or glass to press down will make this easier.

Store chilled in the refrigerator or the slice will crumble quickly.

Eat immediately upon serving and return to refrigerator.
